Ingredients

  • 5 heirloom tomatoes, chopped
  • 1 red onion, finely chopped
  • 2 tbsp fresh parsley, finely chopped
  • 1 tbsp fresh oregano, finely chopped
  • 1 tsp fresh tarragon, finely chopped
  • 2 garlic cloves, minced
  • 1 tbsp extra virgin olive oil
  • 3 tbsp red wine vinegar
  • 1/2 tsp Dijon mustard
  • 1 tsp salt
  • 1/2 tsp fresh black pepper

Instructions

  1. In a small bowl, whisk together the oil, vinegar, garlic, mustard, salt and pepper.
