The cumin and garlic bring out the delicate acidity of the tomato, and the salt brings it to life. Not only is this dish tasty as a salad, but it also makes a great, low calorie topper for steak, chick or fish. I’ve even put it on top of some plain brown rice, and it was incredible. Cumin Spiced Tomato Salad Recipe
A light and flavorful salad to compliment any meal, this is one easy and delicious side dish recipe. This can be eaten by itself, or use it as a topper to sandwiches, meat, or bread.
- 6 Roma tomatoes, diced
- 2 tbsp balsamic vinegar
- 2 garlic cloves, minced
- 1/2 tbsp olive oil
- 1 tsp cumin
- 1 tsp salt
- 1/2 tsp black pepper
- Combine all ingredients in a medium sized bowl, and let sit for about 30 minutes.
