Three Bean Salad

 

This is one of my very favorite salads. I love to make it for potlucks, it just goes so well and everyone loves it. I also love to make it for myself. It’s a perfect lunch, and lasts all week. It’s full of flavor and color, plus it’s very high in fiber (10 grams per serving), which helps to keep you feeling full longer. I use two red bell peppers, I like the sweeter, subtler flavor better. But if you’d like a little more color, use a green pepper. It lasts well for more than a week in the fridge, so it’s perfect for a week of lunches.

Three Bean Salad

This delicious, flavorful and colorful salad is perfect for weekday lunches, a picnic or a potluck.

Ingredients

  • 1 (15 oz) can black beans
  • 1 (15 oz) can kidney beans
  • 1 (15 oz) can garbanzo beans
  • 2 bell peppers (green or red)
  • 10 oz corn
  • 1/2 cup oil
  • 1/4 cup red wine vinegar
  • 1/4 cup balsamic vinegar
  • 2 Tbsp lime juice
  • 1 Tbsp lemon juice
  • 2 Tbsp sugar
  • 1 Tbsp salt
  • 1 clove garlic
  • 1/4 cup cilantro
  • 1/2 Tbsp cumin
  • 1/2 Tbsp black pepper
  • Dash hot sauce
  • 1/2 tsp chili powder

Instructions

  1. Chop the bell peppers.
  2. Mince the cilantro and garlic.
  3. Mix all the ingredients in a large bowl.
  4. Serve chilled.

Variations

If you like a slightly lighter flavor, use 1/2 cup red wine vinegar.

      This three bean salad is 9 Points + per 2/3 cup serving.

  2. This was super easy and a great pre-studying snack for me. The protein and fiber from the beans kept me full and the carbs are good for studying brain power. And it was delicious! It also kept really well. I think next time I will use less of the oil and vinegar and just mix the salad before serving. It seemed a little too liquidy to me. T

      Hi Susan, I do drain my beans, and I typically rinse them too. Beans tend to be canned with a lot of salt, so rinsing helps to get as much off as I can. Enjoy!
