Marinated Tomato SaladSweet cherry tomatoes fresh from the garden are one of my favorite vegetables. These sweet tomatoes paired with cucumbers and sweet bell peppers are bright, summery and perfect for a salad. Combined with the home made vinaigrette the the sweet and tangy onion and vinegar flavor, it’s a perfect side. It can be served immediately, or it can be marinated for up to 4 hours in the refrigerator before serving.

Marinated Tomato Salad

A colorful and refreshing tomato salad. This is a wonderful way to enjoy your fresh garden produce.


  • 3/4 cups white wine vinegar
  • 2 Tbsp balsamic vinegar
  • 1/2 tsp salt
  • 1/4 cup shallots, chopped
  • 2 Tbsp chopped chives
  • 2 Tbsp lemon juice
  • 1/4 tsp ground white pepper
  • 2 Tbsp olive oil
  • 2 lbs cherry tomatoes, halved
  • 4 bell peppers, chopped (any color)
  • 1 English cucumber, sliced
  • Salt & Pepper to taste


  1. Combine the marinade in a canning jar – mix the vinegars, salt shallots, chives, lemon juice, pepper and olive oil.
  2. Seal the canning jar with a lid, and shake until well combined.
  3. Combine the tomatoes, peppers and cucumbers in a large bowl.
  4. Pour the marinade over the vegetables and toss to coat.
  5. Season to taste with salt and pepper.
  6. Serve chilled.

  1. I make 1/2 size the same salad but without olive oil, lemon juice, usually just balsamic vinegar and banana peppers….how many calories is that per serving?

  2. Quick question–is the amount of white wine vinegar correct? It seems like a lot when added to just 2Tbl of olive oil. Thanks.

      That is correct. It does seem like a lot, but it gives the salad a wonderful flavor.
