Fruit with Raspberry Vinaigrette

A refreshing summer salad with fresh melon and grapes, topped with a delicious raspberry vinaigrette.

Ingredients

  • 10 oz frozen raspberries
  • 1/3 cup sugar
  • 1 Tbsp red wine vinegar
  • 2 Tbsp lemon juice
  • 1/8 tsp salt
  • 1 dash nutmeg 1/4 cup olive oil
  • 1 cantaloupe
  • 1 honeydew melon
  • 1/2 seedless watermelon
  • 2 cups red or green grapes

Instructions

  1. Chop the melons into 1 inch chunks.
  2. Combine the melons and grapes in a large bowl.
  3. In a blender, combine the raspberries and sugar. Blend until smooth.
  4. Add the vinegar and lemon juice and blend until well combined.
  5. Add the salt and nutmeg and pulse a couple of times.
  6. Turn the blender on low and slowly add the olive oil with the blender running.
  7. Dress the fruit with the vinaigrette and stir to combine.
  8. Serve chilled.
