Rosemary Roast Potatoes

Yukon Gold potatoes make this dish look like it's rich and buttery, but it's really quite low in fat. These potatoes are flavorful, but simple enough to complement any meal you pair them with.

  • 1 lb Yukon gold potatoes
  • 4 Tbsp light butter
  • 4 cloves garlic minced
  • 2 Tbsp rosemary crushed
  • salt & pepper


  1. Preheat the oven to 350 degrees F. Lightly grease a baking dish.
  2. Wash and peel the potatoes.
  3. Slice them in half of quarters (depending on how large the potatoes are).
  4. Fry the potatoes in the butter with the garlic. Cook for 2-3 minutes, or until the potatoes are golden brown.
  5. Place the potatoes in the prepared baking dish and add the rosemary.
  6. Bake for 30-40 minutes, or until the potatoes are tender.
  7. Season with salt and pepper to taste and serve hot.
