Baked Ratatouille

This is a simple but elegant baked ratatouille. It's easy to make and beautiful to serve. Since this is baked, it takes very little effort to have a delicious vegetable side dish that goes with anything else you want to serve it with.

  • 1/2 lb eggplant sliced
  • 1/2 lb zucchini sliced
  • 1/2 lb roma or beefsteak tomatoes sliced
  • 2 Tbsp olive oil
  • 2 cloves garlic minced
  • salt & pepper to taste
  • Pinch crushed red pepper
  • 1/4 cup red wine vinegar
  • 2 Tbsp fresh marjoram leaves chopped
  • 1/2 Tbsp fresh thyme leaes chopped


  1. Preheat the oven to 400 degrees F. Lightly grease a Dutch oven or other oven safe dish.
  2. Arrange the vegetables in the pan.
  3. In a small bowl, combine the remaining ingredients.
  4. Pour the seasonings over the vegetables.
  5. Bake for 45 minutes, or until the vegetables are tender.
  6. Season again to taste with salt and pepper. Serve hot.
