BASIC GREEK SALAD

A light and refreshing salad with delicious low calorie Greek vinaigrette.

Ingredients

  • 6 cups romaine lettuce
  • 1 hothouse cucumber (chopped or in long peels)
  • 1 pint cherry or grape tomatoes (halved)
  • 1/2 red onion (sliced in half-rounds)
  • 1/2 cup black olives or kalamata olives

For the vinaigrette:

  • 1 clove garlic (minced)
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon Dijon mustard
  • 2 tbsp red wine vinegar
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tbsp olive oil

Instructions

  1. Mix together the vinaigrette dressing and set aside.
  2. In a bowl, combine the salad ingredients in a large bowl.
  3. Dress the salad and toss to dress thoroughly.
  4. Serve immediately.
