Zesty, filling, and meat free, this Lentil Chili is a perfect vegetarian alternative to traditional chili. It’s incredibly easy to make and most ingredients are probably in your pantry. It’s a warm and hearty Weight Watchers chili recipe that will fill you up.

  • 1 yellow onion (diced)
  • 2 green peppers (seeded and diced)
  • 5 cloves garlic (minced)
  • 1 cup dry lentils
  • 1 25 oz can diced tomatoes
  • 3 cups fat free vegetable broth
  • 2 tsp coriander
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste


  1. Spray a large pot or Dutch oven with cooking spray or an olive oil mister and set over medium high heat. Add in onions and garlic and sauté until onions are tender, about 3 minutes.
  2. Stir in remaining ingredients , and bring to a boil. Then reduce heat to low and simmer for about 30-45 minutes.
