This simple salad is fresh and flavorful, and makes a perfect side to just about any meal. Itβs easy to make and requires minimal ingredients, but is filling and delicious!

Salt and pepper to taste
Instructions
Cook quinoa according to package directions. Transfer cooked quinoa to a medium sized bowl, and let cool for about 10 minutes.
Add in remaining ingredients, and toss well to combine. Serve at room temp.
