Quinoa Cucumber Tomato Salad

This easy summer salad makes a perfect side dish to any meal. The quinoa has a slight nutty taste and crunch, and is combined with fresh cucumbers and tomato salad, making a lovely side salad that is as satisfying as it is delicious.

Ingredients

  • 1 cup quinoa uncooked
  • 1 large cucumber diced
  • 1 small red onion finely diced
  • 1 cup cherry tomatoes halved
  • 1/4 cup fresh parsley finely chopped
  • 1 garlic clove minced
  • 1 tbsp olive oil
  • Juice from 1/2 of a fresh lemon
  • Salt and pepper to taste

Instructions

  1. Cook quinoa according to package instructions. Set aside until it cools to room temperature.
  2. Add remaining ingredients to quinoa, and toss well to combine.
