Instructions
Preheat the oven to 375 degrees F. Line a muffin tin with papers, or lightly grease, then set aside.
Combine the skim milk and apple cider vinegar in a glass measuring cup and let the mixture sit.
Sift together the flours, baking powder, baking soda and salt.
Cream the butter and sugar together until light and fluffy.
Add the eggs, milk, and vanilla.
Beat until well combined.
Combine the wet and dry ingredients and stir until just combined.
Fold in the blueberries.
Evenly divide the batter into the prepared muffin tin.
Bake for 20 minutes, or until a toothpick inserted in the middle comes out clean.
