Sandwich with Beet Hummus & Greens

This delicious sandwich is perfect to go with a salad or a cup of soup. It's light and refreshing, but a great source of heart healthy unsaturated fats and fiber.

Ingredients

  • 4 slices whole grain bread
  • 1 avocado sliced
  • 4 radishes sliced
  • 2 cups baby spinach
  • 1 cup alfalfa sprouts
  • 4 Tbsp beet hummus

Instructions

  1. Spread the hummus on the bread.
  2. Top with the avocado, radishes, spinach and sprouts.
  3. Top the sandwich with the other slice of bread and slice the sandwich in half.
