green olive and lemon chicken

  • 2 lbs skinless, boneless chicken breasts, cut into 6 fillets
  • 1 tbsp olive oil
  • 2 lemons (quartered)
  • 1 cup pitted green olives (drained)
  • 1 tsp paprika
  • 2 tsp cumin
  • 1 large onion (chopped)
  • 5 cloves of garlic (minced)
  • 2 cups fat free chicken broth
  • Salt and pepper to taste


  1. Heat a large, skillet over medium high heat. When pan is hot add olive oil.
  2. Season chicken breasts generously with salt and pepper. Place in pan, and sear until golden brown, about 3-4 minutes on each side.
  3. Remove chicken and set aside. Add onions and garlic to the pan, and sauté, stirring often, until tender, about 2-3 minutes. Add splashes of the chicken stock as needed to keep the onions from sticking to the pan.
  4. Now add in the lemon, olives, paprika, cumin, and remaining stock. Bring to a boil, and let simmer about 10 minutes.
  5. Add in the chicken, turn the heat to medium low, cover, and let cook until chicken is tender and cooked through, about 30 minutes.
