A light and refreshing fruit salad that has both sweet and savory flavors, makes for the perfect side dish to any summer celebration.

Ingredients
  • 6 cups watermelon (diced)
  • 1 1/2 cups fresh blueberries
  • 1/3 cup fresh mint leaves (finely chopped)
  • 1/3 cup reduced fat feta cheese (crumbled)
  • 2 tsp olive oil
  • 2 tbsp balsamic vinegar
  • Salt to taste
Instructions
  1. In a large bowl, whisk together the oil, vinegar, and salt.
  2. Add in the remaining ingredients, and gently toss to combine.
