This Memorial Day Weekend and you’re probably on the lookout for some great Weight Watchers potluck recipes. You don’t have to look any further than this amazing Watermelon Blueberry Mint Salad with Feta.

Don’t be tempted to use the traditional fruit tray, this is a much better option for this Memorial Day, or any other summer day. This salad is wonderfully refreshing. It’s both sweet and savory. It’s incredibly easy to prepare, coming together in about 15 minutes.

The fruit is what really gives this salad an amazing base. Watermelon is a sweet and simple treat that is juicy and delicious. It hits the sweet spot of satisfying your sweet tooth without adding lots of added and unhealthy sugars to your day. It’s low in points and perfect for the base of this salad.

Fresh blueberries add a lovely note to this salad to give it patriotic flair. Not only do they add the patriotic blue, but they add antioxidants, vitamins and minerals.

They’re fresh and delicious, with just the right amount of sweetness. Blueberries help make this salad aesthetically pleasing for the eyes as well as a pleasing treat for the palate.

Added to the watermelon and blueberries is fresh chopped mint. You can’t go wrong with fresh mint in a salad like this. Mint is something that is bright and refreshing. It’s cleansing and beautiful and just tastes invigorating. It’s the perfect bright addition to this salad.

There are two perfect ways to balance out the sweet of this salad – feta cheese and the dressing. First, the cheese. Adding feta cheese to your fruit salad might seem a little strange but take my word for it – it’s amazing. The savory flavor of the cheese is exactly what this salad needs to be perfect – sweet but not overwhelming.

Feta is a mild flavored cheese that is pleasing to the palate and works perfectly to balance out the sweet watermelon and blueberries and blends together with the bright and fresh mint.

But don’t forget the dressing! Balsamic Vinaigrette is probably one of my favorite salad dressings. It’s rich and tangy and adds a delicious flavor to salad. It’s perfect for just about every salad – including this fruit one. Just like the feta – trust me on this one, you REALLY want to add the dressing in this salad. It might be the strangest thing you’ve done, but you need the tangy balsamic vinaigrette to really take this salad to the next level.

Take this tasty and unique salad to your Memorial Day picnic, potluck or BBQ, it’ll be a sure hit. It’s sweet and savory with the perfect blend of flavors. The cool watermelon, sweet blueberries, bright mint, smooth feta and tangy balsamic vinaigrette – it’s the perfect combination.

This Watermelon Blueberry Mint Salad with Feta is tasty and unique. It’ll be the only salad like it this weekend and it’ll be one of the few that you’ll go home without any leftovers! It’s perfect for your BBQ, picnic or potluck – or when you just want to have a bright, delicious and refreshing summery fruit salad.
