They are so simple to prepare, yet are very flavorful and savory. Roasting the carrots bring out a wonderful new taste, and helps get rid of the some of the sweetness of the carrot. It ends up having more of a potato-like flavor.
I roasted mine using salt, pepper and cumin, but you can experiment with this and use any seasonings you’d like. Also, this is the ONLY way I can get my 4 year old to eat a carrot. So that alone is a huge plus in my book!

Roasted Carrot Sticks
This easy roasted carrots recipe is so simple, yet boasts a delicious flavor and lots of nutrients, all for 0 Points. It makes a fantastic healthy side dish recipe to many meals, and they are an ideal alternative to French fries roasted potatoes.
Ingredients
- 1 lb bag carrots, peeled and sliced into sticks
- 1 tsp salt
- 1/2 tsp cumin
- 1/2 tsp pepper
Instructions
- Preheat oven to 425.
- Line a baking sheet with parchment paper, and lightly mist with an olive oil mister or a non-fat cooking spray.
- Evenly spread carrot sticks onto baking sheet and little mist with an olive oil mister.
- Sprinkle with salt, pepper and cumin.
- Roast until tender and browning on edges occurs, about 20-25 minutes.
