If you want a healthy, 0 Points alternative to french fries, or roasted potatoes, these Roasted Carrot Sticks are a fantastic option.

They are so simple to prepare, yet are very flavorful and savory. Roasting the carrots bring out a wonderful new taste, and helps get rid of the some of the sweetness of the carrot. It ends up having more of a potato-like flavor.

I roasted mine using salt, pepper and cumin, but you can experiment with this and use any seasonings you’d like. Also, this is the ONLY way I can get my 4 year old to eat a carrot. So that alone is a huge plus in my book!

Roasted Carrot Sticks

This easy roasted carrots recipe is so simple, yet boasts a delicious flavor and lots of nutrients, all for 0 Points. It makes a fantastic healthy side dish recipe to many meals, and they are an ideal alternative to French fries roasted potatoes.

Ingredients

  • 1 lb bag carrots, peeled and sliced into sticks
  • 1 tsp salt
  • 1/2 tsp cumin
  • 1/2 tsp pepper

Instructions

  1. Preheat oven to 425.
  2. Line a baking sheet with parchment paper, and lightly mist with an olive oil mister or a non-fat cooking spray.
  3. Evenly spread carrot sticks onto baking sheet and little mist with an olive oil mister.
  4. Sprinkle with salt, pepper and cumin.
  5. Roast until tender and browning on edges occurs, about 20-25 minutes.
