Lately, I’ve been a bit behind on my meal planning and food organizing. Things have been really chaotic for my family these last few months, and sometimes, life just gets in the way. Unfortunately, this had led to a lot of eating out, less cooking at home, and poor food choices. However, during this tumultuous time, the few times that I have managed to cook a healthy meal, I’ve been lucky enough to have a few quick and easy recipes up my sleeve to rely on. Meals that I can prepare on the fly and require just a handful of ingredients. This Honey Soy Chicken drumstick is a hit with the family EVERY TIME. I’m not kidding! It’s incredibly flavorful and tender, and really helps to satisfy everyone’s sweet and salty cravings. Serve over a bed of fluffy, steamed brown rice and with a side of roasted veggies, and you’ve got a delicious meal in a pinch. Enjoy!
Honey Soy Chicken Drumsticks Recipe
Ingredients
- 2 lbs chicken drumsticks
- ¼ cup honey
- ¼ cup rice vinegar
- ⅓ cup reduced sodium soy sauce
- 4 garlic cloves - minced
- Salt & Pepper to taste
Instructions
- In a large bowl, whisk together all ingredients except the chicken. Add in drumsticks. Cover and let marinate at room temperature for about 90 minutes, occasionally rotating drumsticks to coat.
- Preheat oven to 375 degrees. Line a large, rimmed baking sheet with foil or parchment paper. Place drumsticks on baking sheet, and cover sheet tightly with foil.
- Bake for about 40 minutes. Remove foil, and return to oven for another 20 minutes, or until chicken is fully cooked through and browned.

Thanks for the recipe! I put this into the WW recipe builder – (my chicken was a fraction less than 2 lbs, so I used 1 7/8 lb.) 2 drumsticks is 3 servings total. The smart points value is actually 14 according to the site. (unless you used skinless chicken, which doesn’t appear to be the case.)
