Ever since I was very young, I have adored all things salt and vinegar.

So when I came across the original version of this recipe at Umami Girl, I was extremely excited to give it a try. I altered her version a bit, just used a LOT less oil, so that they would be fewer Weight Watchers Points. OMG, they were so good!

They do have a very strong taste of vinegar, so if you want a more mild taste, boil the potatoes in half vinegar, and half water. I prefer the strong vinegar taste, so I boiled them in just vinegar.

They taste identical to salt and vinegar potato chips and come out to just 2 Points per serving. I made these as a side dish to my Crock Pot Beer Chicken, and it was a perfect meal. These Roasted Salt and Vinegar Potatoes will definitely be made again.

When it comes to cheese, Brie is my absolute favorite. I am seriously obsessed with it and cannot be trusted with it in the house. So I rarely ever buy it, because I can, and will, sit there and eat the entire package. But when I came across a light brie cheese at Trader Joe’s I decided to give it a try. I don’t know why, but I’ve always assumed ceviche recipes would be very complicated. After all, we are talking about “cooking” fish in nothing but citrus juice.

Surely there had to be some secret to this that is something only hardcore chefs know how to do.

Turns out, it’s incredibly simple!! I attempted it for the first time last week, and my Shrimp Ceviche with Avocado turned out amazing. Even my super picky/critical/extremely difficult to please husband loved it.

The shrimp ceviche is so fresh, light, and the perfect Weight Watchers lunch idea for a hot summer day. I ate mine with my favorite Organic Reduced Fat Tortilla Chips, and it was the perfect meal.

Now that I see how amazingly easy it is to make ceviche, I’ll be making a LOT more of it in the future. Each serving is just 4 Points, but you can make it even lighter by skipping the avocado — though I cannot do that, as I have a serious infatuation with avocado.

Crock Pot Beer Chicken

Got some beer still left over from the 4th of July? Well this Beer Crock Pot Chicken Recipe is the perfect way to use some of it up! Just a few ingredients, plus a bottle of your favorite beer tossed into a crock pot make some of the most delicious chicken I’ve ever tasted. It’s so simple, yet the end result is delicious.

Grilling the veggies gives them such a nice taste and adds a real summer BBQ feel to the dish. It would make a great Weight Watchers pasta recipe to take to a Potluck too.

I plan on serving this as one of my 4th of July Weight Watchers Recipes at my BBQ this Wednesday, since a few of my friends, who are also Weight Watchers, will be there too. But this Grilled Zucchini and Tomato Parmesan Pasta Recipe is so good, no one else will be aware that they are eating lighter pasta.

I have to say, this Baked Ranch Chicken is one of the best Chicken Recipes I’ve ever had. It’s so simple, and yet so delicious. The flavors are perfect, and the crunchy cornflake breading works wonderfully. My family really enjoyed this dish, and it has definitely become a staple in our house.

These delicious Mini Bacon, Fig and Goat Cheese Pizzas are the perfect twist on traditional pizza recipes. And at 5 Points per pizza, they are a great idea for a unique Weight Watchers lunch recipe. Traditionally made with ground beef or lamb, Persian Kofta Kebabs are a delicious way to prepare ground meat. The flavors are fantastic, and they are incredibly easy to make.

A much more naïve version of me had these kebabs on my first trip to Israel, and I was confused as to why the “kebab” I ordered was ground meat, instead of the lovely little cubes I was used to. And that became my first lesson in the Kofta (or Kofte) Kebab.

The origin of the word köfte is the Persian word “kufteh” meaning “mashed”. In old times, since people did not have meat grinders, they minced meat into very small pieces and then mashed them in large mortars. I fell in love with these delicious skewers of meat, and I’ve been hooked ever since.

Now, there’s a Middle Eastern market a few blocks away and I often go there and indulge in their ground beef Kofta Kebabs — they are so amazingly good. But definitely not low calorie. So to keep myself from consuming too many Weight Watchers Points, I decided to experiment a bit and create a version using lean ground turkey.

In order to keep the turkey from getting dry, I also added some shredded zucchini to the ground turkey. And while my picture didn’t quite turn out so well, the taste was fantastic! And it added up to just 4 Points per serving. My husband really likes his meat charred, so I cooked the ones you see in the picture for a bit longer.

I served these with some low calorie tzatziki sauce, and they were a hit. If you are looking for a unique ground turkey recipe to try, these Kofte kebabs are a perfect idea!
