Eggplant Tahini Wrap

I honestly don’t think I’ll ever tire of roasted eggplants and Tahini. The favor combination is incredible and it’s an incredibly healthy dish. Craving more of a meal, I took one of my favorite Weight Watchers Side Dish Recipes and turned it into a wrap with the simple addition of a Flat Out flatbread and some fresh lettuce. It was sooooooo good! And all the fiber made this very filling and satisfying for just 5 Points. I had one of these Egglant Tahini Wraps with a light spinach salad for lunch and was content until dinner time. This is truly a delicious and easy wrap recipe that I will definitely be making again and again.

Eggplant Tahini Wrap

Delicious smoky roasted eggplant is topped with fresh, homemade tahini sauce and then rolled into a light Flat Out wrap. At just 5 Points, this is a wonderful and very satisfying Weight Watchers lunch recipe.

Ingredients

  • 2 medium sized eggplants, sliced into 1/4” slices
  • 4 Light Original Flat Out Wraps
  • 2 tbsp tahini paste
  • 2 tbsp water
  • Juice from 1 small lemon
  • 1 garlic clove, minced
  • 1/2 tsp paprika
  • Romaine lettuce leaves
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400 degrees. Line a rimmed baking sheet (you may need more than 1) with parchment paper, and mist with cooking spray or an olive oil mister.
  2. Place eggplant slices evenly onto baking sheet, mist with olive oil mister or cooking spray, and sprinkle with salt and pepper. Roast until well browned, about 20-30 minutes, flipping once halfway through.
  3. Meanwhile, combine tahini paste, water, lemon juice, garlic, and paprika in a small bowl. Season with salt.
  4. Assemble wraps by spreading 1 tbsp tahini sauce on each out Flat Out bread. Divide roasted eggplant evenly among the wraps. Then top with 1 or 2 large leaves of lettuce. Fold wrap in at the sides and then roll up.
