It’s Cinco de Mayo, and I’ve got nothing but Mexican food on my mind today! So, I’m sharing my favorite, super easy, authentic pico de gallo recipe. Not only do I use this 0 Smart points dish as a dip for tortilla chips, but I use it to top many other foods as well…chicken, fish, salads, sandwiches. My husband will even eat it straight up with a spoon! It may take a few attempts for you to customize this salsa recipe, and have it adjusted to your specific tastes. If you like it spicy, you may want to add a bit more jalapeño and garlic. If you want a slightly sweeter flavor, you may prefer red onion. But you really can’t go wrong with this…experimenting with the recipe is fun and delicious! My kids eat it a lot, so this is my mild version. It tastes so fresh and flavorful, I just can’t ever get enough of it. Good thing it’s 0 Points! Now, if we could just do something about those tortilla chips…
While it may officially be fall, we’ve been having a heat wave here in Southern California, so I’ve been doing my best to take advantage of last minute summer grilling! One of my easiest, healthiest, and most delicious Weight Watchers grilling recipes is this Grilled Salmon with Avocado Salsa. The creaminess of the avocado and the moist, buttery avocado are a perfect contrast to the tangy lime and spicy jalapeño. The flavors are bold and delicious, yet this healthy meal is only 8 Points + per serving. Pair it with steamed brown rice or quinoa and roasted vegetables for a complete meal.
I first came across this amazing Cranberry Salsa Recipe at Crafty’s Cafe. Admittedly, I was a bit skeptical at first. But since I adore salsa, I was eager to give it a try. Plus, I thought it would make a really unique Thanksgiving appetizer recipe or Christmas appetizer recipe that would still be Weight Watchers friendly. It sure smelled good while I was making it, and when it was finally ready, I grabbed my favorite baked tortilla chips and dug in. OMG. It was SO good! I seriously could not stop eating it!! It was fresh and flavorful, and also a bit sweet and tart. My version uses lime juice instead of lemon, a bit less sugar and more fresh jalapenos. The flavor combinations worked out perfectly, and the cranberry salsa was a hit. While this makes a perfect festive holiday appetizer or snack, I’ll be making it as often as I can find fresh cranberries at the store. This was truly a fantastic dish and a must try.
