It’s SO good! And this Weight Watchers soup recipe doesn’t take a lot of time or effort to prepare….just around 30 minutes. Another great healthy dinner idea for when you’re short on time. If you prefer a creamy texture to the soup, just process 1 of the cans of beans before adding them to the soup. You can keep the other beans whole. That will add some thickness to the broth, while still leaving some beans whole for texture. I personally like it with a broth-y base so I can dip some toasted crostini or garlic bread into it. Ingredients
  • 1 lbs mild chicken sausage
  • 2 14 oz cans of cannelloni beans drained and rinsed
  • 1 large yellow onion diced
  • 3 medium carrots diced
  • 3 stalks of celery diced
  • 1 6 oz bag of fresh spinach
  • 1 tbsp olive oil
  • 5 cloves of garlic minced
  • 6 cups fat free chicken broth
  • 1 tbsp dried parsley
  • 1 tbsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 6 tbsp grated parmesan cheese
  • Salt and pepper to taste

Instructions
  1. In a large pot or dutch oven, heat oil over medium high heat. Add sausage and cook until browned, tossing occasionally.
  2. Turn pot to medium heat, add carrots, onion, and celery and sauté 3 minutes (while scraping bottom of pan to get the browned bits), add in garlic and sauté 1 minute longer. Add a tbsp or two of broth if it’s sticking too much.
  3. Turn heat up to medium high, and pour in broth, beans, parsley, oregano, rosemary, thyme, salt, and pepper. Bring to a low boil, and allow to gently boil 10 minutes. Add spinach and allow to boil 5 minutes longer until spinach is wilted.
  4. Season with additional salt and pepper as desired. Top each serving 1 tbsp of fresh grated parmesan cheese just before serving.
