Weight Watchers Banana Bread

Weight Watchers Oatmeal Banana Bread Recipe

Ingredients:
- 1 1/4 cup all-purpose flour
- 1/2 cup unpacked brown sugar
- 1/2 tsp table salt
- 1/2 tsp baking soda
- 1/4 tsp baking powder
- 1/2 tsp allspice
- 3 tsp canola oil
- 1 large egg, beaten
- 2 medium egg whites, beaten
- 3 large bananas, ripe
- 1 cup uncooked old fashioned oats

Directions:
Preheat oven to 350°F. In a large bowl, stir together dry ingredients. Add oil and eggs; mix thoroughly.
In a smaller bowl, mash bananas with a potato masher or fork. Add bananas and oatmeal to batter.
Spray a loaf pan with cooking spray. Pour batter into pan and bake until top of loaf is firm to touch, 45 to 55 minutes. Remove from oven and allow to cool in pan for 5 minutes. Flip out and cool on a wire rack for another 10 minutes. Slice loaf into 10 equally sized slices.

Serving size is 1 slice
Each serving = 4 Weight Watchers Points

    I made this bread and not only did I enjoy it but so did my family. Great recipe with great flavor. I did have to subsitute cinnamon for allspice due to not being able to find allspice in cabinet. I made the loaf and had for breakfast as well as a snack.

    Found this recipe to be too sweeet, nutritionally inadequate, and the texture unacceptable. If this typifies WW recipes I understand how people lose weight…the food is too unappetizing to eat!

    I also made the bread and used a little cinnamon, nutmeg and groud cloves in place of the allspice becasue I too did not have allspice in the cabinet. I also substituted the oil with applesauce and it was delicious the entire family enjoyed it and it was most definetly not to sweet nor did it lack texture. Great recipe and I recommend you try it.

    Just baked this and made the following changes:

    1/3 cup liquid egg whites for eggs
    3/4 cup unsweetened applesauce for canola oil
    1/2 tsp cinnamon
    1/2 cup oatmeal

    Bread is delicious and moist. Thanks for another great recipe.

    I have to admit that I stumbled onto this recipe and didn’ read it as carefully as I should have. I generally use a family recipe that was pretty good; although I wanted to find something different and a bit on the “heavier” side, which the oatmeal would normally do. I followed the recipe precisely and the cooking time as well. The end result, awful. I don’t know how this can be made edible at this point. The oatmeal didn’t fully cook and it left lumps of oatmeal in it. I should go back to the food network.

    I make this bread all the time and love it! It always comes out just perfect. I adjust the recipe to use splenda brown sugar blend in place of the regular brown sugar and use egg beaters instead of the egg whites and full egg ( I use a 1/2 cup which is 2 egg equivalent). I also use vanilla instead of the allspice. If I am not making it for a audience that cares about the Weight Watchers points, I also add a 1/2 bag of chocolate chips! (However, be careful they can make it gooey!)

    I’m not sure on the exact calorie count, as this recipe was passed along to me and only had the Weight Watchers Points. :(

    I made this recipe a while back and found the texture way too chewy, borderline inedible. It seemed as if the oats did not cook at all. I wonder if substituting the old fashioned oats for quick cooking oats will help. That is what I am going to try soon. Will let you know how that goes.
