Chocolate Chip Banana Bread

I’m not sure about everyone else’s house, but we almost always seem to have bananas that are getting overripe. As a result, I’m frequently making something that requires overripe bananas. Well, to be perfectly honest, I frequently make things like banana bread, but I also usually have a half a dozen bananas in the freezer. If your bananas are getting ripe, and you don’t have time to make something, just stick them in the freezer. Those bananas are perfect for making this banana bread. The number of bananas, along with the way that the liquid is reserved and then reduced from the bananas adds to the rich banana flavor and also the incredibly moist texture of this banana bread. I typically cover the banana bread with foil about half way through cooking. This helps the center cook without the top getting too brown. Really, this is a fabulous recipe. If you’re not a fan of chocolate (like my husband), just use walnuts instead of chocolate chips. I love this for breakfast and quick snacks – it’s so moist and delicious.

Almond Banana Chocolate Chip Cookies – 4 Points +

Almond & Chocolate Chip Cookies

 

These delicious cookies are gluten and dairy free, but don’t think they’re going to end up tough, grainy and just downright strange. They are fluffy and tender. Almond butter adds a nutty flavor, but without being too overpowering. These cookies are perfect with the chocolate chips, but if you’re not a fan of chocolate, use chopped pecans or walnuts (the points are the same). You can use any gluten free flour blend for the 1 cup of flour. If you can’t have the xanthan gum, use 3 tablespoons of psyllium husk instead. If you don’t need to make gluten free cookies, just use 3 1/4 cups regular wheat flour (the points don’t change for this substitution). A word of warning – the cookies are best fresh out of the oven and can be a little bit addictive.

Low Fat Banana Bread

I’ve had my share of Weight Watchers banana bread recipes, but this version is my favorite. The bread comes out so moist and delicious, and the applesauce and vanilla extract help to give it just the right amount of sweetness without having to use a lot of sugar. If you prefer to use a regular, all-purpose flour with this instead of whole wheat, you absolutely can. Or you can use a mixture of the two flours. But I like the added nutrition of the whole wheat. I also added a few tablespoons of organic raw flaxseed because I was serving this to my kids, but that does add an extra Point or two. So, I posted the recipe without the inclusion of the flaxseed. This low fat banana bread is wonderful with your morning coffee or tea, or for an after dinner sweet treat. And at just 4 Points + for each thick slice, you’ll be thrilled at how filling and satisfying it is. Enjoy!
