Ingredients

  • 1 cup whole wheat all-purpose flour
  • 1 cup whole wheat pastry flour
  • 1 cup old fashioned whole grain oats
  • 1/2 cup brown sugar
  • 6 tbsp unsalted butter, cold and cut into chunks
  • 1/2 cup diet cranberry apple juice (or just diet cranberry juice)
  • 5 apples peeled, cored, and cut into chunks
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp ground nutmeg

Instructions

  1. Preheat oven to 350 degrees, and spray a 9” x 13” baking pan with nonstick cooking spray.
  2. In a food processor, combine flour, oats, and ¼ cup of sugar; pulse until mixed well. Add in the butter and pulse until combined. Add in the apple cranberry juice and pulse until dough begins to pull away from the sides of the bowl.
  3. Scrape the dough into the pan, and press it out into an even layer. Bake in oven until dough is dry, but not browned; about 10-14 minutes.
  4. In a large bowl, toss the apples, nutmeg, cinnamon, vanilla, and remaining sugar. Evenly spread this mixture over the baked pastry in the pan.
  5. Bake until crust is brown and apples are tender; about 30-40 minutes. Cool and cut into 12 even squares.

    It just didn’t turn out well — the crust was really dry. Perhaps there should have been an egg in the dough? Also, the picture shows some crumb topping covering the apple, but the instructions say to scrape the dough into the pan, and press it out into an even layer. It doesn’t say anything about reserving some of the dough for the topping. It did look really good in the picture!

      Agreed. Loved the idea, but very disappointing results. Dry tasteless crust; apples never formed their own ‘syrup’ so tasted more like spicey dehydrated apples. Wish there was some way to recover the situation – some kind of recipe hack – otherwise, it’s a lot of ingredients wasted…
