Arugula Chicken Salad

Fresh arugula, strawberries and chicken tossed to make a delicious, beautiful and healthy salad.

  • 8 cups arugula
  • 4 chicken breast halves sliced & cooked (about 12 oz total)
  • 2 cups strawberries chopped


  • 2 Tbsp mustard seeds
  • 2 Tbsp cider vinegar
  • 1 Tbsp Dijon mustard
  • 1/4 cup olive oil
  • 2 Tbsp shallot finely chopped


  1. In a small bowl or glass jar with lid, combine the dressing ingredients. Set aside.
  2. Evenly divide the arugula between four large bowls or plates.
  3. Top with the chicken breast and strawberries.
  4. Drizzle on the dressing and serve.
