Soup in the summer heat is always questionable. But this soup is different that your typical soup. This creamy and sweet carrot ginger soup is perfect for a hot summer day. The carrots are sweet, and the ginger adds a delicious spicy heat to the soup. This can be made with regular dairy milk, or soy milk to make it lactose free and vegan. It can be served with a dollop of cream, sour cream or yogurt place in the bottom of the bowl and then the chilled soup poured over the top. If the soup is served hot, it can be garnished with a little cream on the top of each bowl.

I’m someone who loves the grilled cheese sandwich that comes with tomato soup, but I really don’t care for the tomato soup. Until, that is, I made roasted red pepper tomato soup. It’s fabulous. It has the same creamy tomato flavor, but with the added sweetness and richness of the roasted peppers. If you prefer to have a completely smooth and creamy soup, use a food processor, blender or immersion blender. I left mine as it was, and enjoyed the tender pieces of tomato and sweet onion with my grilled cheese.

I am SO excited about today’s Fabulous Food Find, NoOodle, I don’t even know where to begin. Winter Minestrone

The ultimate in comfort food, this healthy minestrone soup recipe is a great way to fill up and feel incredibly satisfied without using many Weight Watchers Points. It’s thick and hearty…almost more like a stew, and is loaded with vegetables and fiber. The tomato based broth is seasoned just perfectly, and the spinach adds a nice touch. Each serving is just 4 Points +, so feel free to pair this with a bread stick and salad for a complete, guilt free meal. When I made this minestrone, I used a high fiber alphabet pasta (it was what I had on hand for the kids), but any kind is fine. Though I suggest using something small, like ditalini. The soup also reheats very well…I actually froze individual portions so I could just grab one from the freezer on hectic days where I needed a quick lunch. This feel good Winter Minestrone is as healthy as it is delicious, and I highly recommend giving it a try. Enjoy!

I like to make a large batch of this soup and then divide it up into individual portions and freeze them. In the world of Weight Watchers, this 0 Points soup has reached celebrity status. It’s yummy, easy to make, and has ZERO POINTS!!! As a Weight Watchers member, this soup has been a staple for me. I find it best to make a large batch on the weekend, and then divide into 1 1/2 cup portions (those little plastic Ziploc containers work great for this), and store them in my fridge or freezer. This way, when I’m busy during the week, I can just whip out one of these babies on a moment’s notice!
