With all the Valentine’s Day prep hustle and bustle this week (on top of sports practices, appointments, meetings, and errands), this Instant Pot Chicken Enchilada Soup recipe was a lifesaver for me! It comes together quickly and easily and is perfect for the days when I just HAVE NO TIME. And this soup is easy, people. Like really, REALLY easy.
With the chilly winter weather in full swing, I just cant get enough soup! Chicken noodle soup has always been one of my family’s favorite comfort foods, but the traditional egg noodles that are used can really add up the calories. By simply subbing out the egg noodles with “noodles”, which is just zucchini that has been spiraled, I was able to make my homemade chicken noodle soup recipe a LOT lighter and healthier.
Well, here we are…the last day of 2016. And I’m full steam ahead in the kitchen prepping for weeks of healthy eating and holiday binging detox! Today’s recipe is one that is a HUGE help to me when I’m trying to cut calories…Stuffed Cabbage Soup. Growing up, my mom would often make stuffed cabbage rolls for dinner.
As it starts to cool down this fall, I feel a lot more like making and eating soups. One of the reasons that I love soups is that they are so quick and easy to put together. Chili is one that always ends up in our crockpot, along with minestrone and a few others. I typically do a chicken noodle soup, but decided to leave the noodles out this time. I just combined chicken broth, chicken and vegetables into a healthy and delicious soup that was ready in less than 30 minutes. It’s a great way to use up leftover…
I always love ordering chicken tortilla soup at my favorite Mexican restaurant. But depending on how it’s prepared, this dish can be dangerous in terms of Weight Watchers Points. Adding in your favorite fixin’s can really rack up the extra fat and calories too. After a bit of work in the kitchen, I came up with own version that is a LOT healthier than the restaurant version, but very healthy and low in Smart Points.
Fall is a perfect time to enjoy rich and delicious soups and stews. This wild rice and chicken soup is hearty and creamy, it’s perfect to finish a cool fall day.

I am SO excited about today’s Fabulous Food Find, NoOodle, I don’t even know where to begin. Recently, the founder of NoOodle, Chef Terri Rogers, reached out to me and asked if I’d like to try out her product. I was unfamiliar with what NoOodle was, so I immediately went to her website, www.nooodle.com to check it out. And I read that Chef Terri had started creating NoOdle dishes in her restaurant by using the popular Shirataki noodles in some of her recipes.
