I’m all about Weight Watchers Soup Recipes these days, and my Lentil, Beef, and Quinoa Soup was definitely one of my favorite new recipes that came out of my kitchen this week. I love soups that are hearty, and filling, and pretty much a complete meal in one bowl. The tender lentils and juicy ground beef are the stars of this soup. They add wonderful flavor and texture, and are complemented perfectly by the earthy quinoa, wholesome vegetables and incredible spices. It’s a pretty easy soup to throw together, it delivers a lot of flavor, and is perfectly satisfying. The nourishing ingredients are a powerhouse of nutrition too…tons of fiber, protein, and vitamins. On a chilly fall day, this Lentil, Beef, and Quinoa Soup recipe makes a great lunch or dinner with little to no side dishes needed. I’d serve this with maybe a light green salad and nothing more. Reheats and freezes well too, so get this soup on your to do list soon! You won’t regret it.

Philly Cheesesteak Sloppy Joe

As a kid, I grew up eating Sloppy Joe’s as a regular staple. It was an easy meal to cook, and pretty inexpensive to make, so we ate it a LOT. I do occasionally make Sloppy Joe’s for my kids, which they love, but I will still enjoy one myself every now and then. Not too long ago, I decided to try out a new concept I’d seen around a few times, by combining the ingredients of a Philly Cheesesteak in the form of a Sloppy Joe. Really, this is a spectacular idea, and I’m totally surprised it hasn’t become a huge thing yet! The end result was wildly successful, and absolutely delicious. All the traditional Philly Cheesesteak flavors were there, but it was an easier recipe to assemble because everything was already combined together before I even got it on the bun. And these cheese just melts right into the ground beef making it oh-so sloppily amazing. I recommend sandwich thins with this recipe in order to cut calories, but you can use any kind of bun you’d like. When I made this recipe for my photo, I used the only buns I had on hand at the time, which wasn’t the sandwich thins, but you get the idea. :) Enjoy!

Mexican Beef and Zucchini Skillet

Here’s another amazingly good low carb Weight Watchers recipe that was a big hit with my family. I had a few extra zucchini on hand recently that I didn’t want to go to waste, so I put together this Mexican Beef and Zucchini Skillet Recipe for a quick, easy and healthy dinner. All the ingredients are inexpensive and are almost always on hand in my pantry. For the kids, I served this over some brown rice and they loved it! Surprisingly, they gave me no grief about the zucchini being in there. I really love this dish with the ground beef, even though it adds extra fat and calories. The flavor of the meat works nicely with the mild zucchini. But if you want to trim this recipe down a couple of Points, you could use ground chicken or turkey instead. With the beans and zucchini, it’s bulked up very well, and is absolutely satisfying. This Mexican Beef and Zucchini Skillet recipe is perfect for busy weeknight dinners. And leftovers freeze nicely, too! Enjoy.

Classic Cuban Picadillo Recipe – 5 Smart Points

Classic Cuban Picadillo

If you’ve never had it/heard if it before, picadillo is a traditional and popular dish that is a staple in Cuban cuisine. It’s basically a tender stew of ground beef and tomatoes, with cinnamon and/or raisins added for sweetness, and olives added for salt. It’s typically served over rice, but also works great as a stuffing for empanadas, quesadillas or wraps. It smells and tastes heavenly, and is the ultimate in Cuban comfort food. This recipe is favorite of my kids’ and always gets gobbled up. They eat it with the rice, and my husband and I just ate it as is. To keep it healthy and Weight Watchers friendly, I just used an extra lean ground beef and used cinnamon instead of raisins. It was incredibly fast and easy to make, and was absolutely divine. Truly a satisfying and indigent dish that is totally guilt free. I highly recommend giving this one a try!

IKEA Copycat Swedish Meatballs

I don’t about you folks, but when I go to IKEA, I can’t wait to get down to their cafeteria and wrap my tastebuds around some of their famous Swedish meatballs! They are just soooooo good! Since I can’t realistically make a trip to IKEA every time I want their meatballs, I got to work making a healthier IKEA Copycat Swedish Meatballs Recipe. It’s actually a pretty easy recipe to make, and these meatballs turned out just as good, if not, BETTER than IKEA’s. Now, I just need to create a lighter version of their delicious Lingonberry sauce to go with it, and I’m set! At 9 Smart Points for 6 meatballs and sauce, this delicious dish makes a perfect Weight Watchers substitute for the original version. If you love IKEA’s Swedish Meatballs as much as I do, this copycat version is a must try!

Zucchini Lasagna

Who doesn’t love lasagna? It’s a favorite meal of mine, and one that I can easily make gluten free (just use gluten free noodles). It’s a great meal to stick in the freezer when I know I’m going to be out of town, so that my husband can just stick it in the oven after work. I thought I’d give our traditional lasagna recipe a low-carb makeover. Zucchini works so well as noodles in other traditional pasta dishes, so why not lasagna? It turns out this is delicious. I’m pretty picky about how I like my zucchini (especially cooked), but this was delicious. It was tender, but not overpowering with the rest of the delicious sauce. Give this one a try for one of your next family meals. It’ll be a definite hit!

Salisbury Steak

Sometimes it’s really nice to just pull out an old favorite. You know it’s going to be delicious every time and you know that it’s simple and everyone likes it. For my family, one of those recipes is Salisbury steak. You can use the minute steak for it, or tenderized round steak, but I usually just use hamburger. It’s easy and I’ve always got it on hand. Make up your patties and fry them in a skillet, then make up a beef gravy with onions (and mushrooms if you’re so inclined) to top the patties. Serve with a side of mashed potatoes, corn and green beans and you’ve got a simple, delicious and well-loved meal ready to go in no time.

One Pan Cheesy Chili Mac

Have I mentioned before how much I adore one pan meals? With 2 young kids, 3 cats, and a husband who acts like a teenager, they just make my life SO much easier. This One Pan Cheesy Chili Mac Recipe was a HUGE hit and I’m really excited to share it. I used extra lean ground beef in this, but you could easily substitute ground chicken or turkey if you prefer. The tender, perfectly seasoned meat is cooked in one skillet along with whole wheat macaroni noodles, and then it’s all topped with gooey, melty Mexican cheese. Try this recipe, and I’d be surprised if your family didn’t love it as much as mine.

Cranberry Meatballs

These meatballs are definitely a family favorite. It might seem a little strange with the combination of cranberry and sauerkraut, but trust me, it’s a perfect combination once you get it cooked together. If you don’t care for sauerkraut, you can make this with just plain cabbage instead. I like to mix turkey and ground beef so my meatballs still have enough fat to stay together but they’re a little less greasy that way. I also have made the meatballs and sauce separately. I like to bake my meatballs on a rack so they’re able to drip the fat down into the pan and don’t sit in it. I then just add the sauce and reheat the meatballs before serving. The sweet cranberries with the savory meat is a wonderful combination. I added a wild rice pilaf with vegetables and a simple tossed salad with mine. Delicious!

Ranch Meatballs Recipe

A good variation to meatloaf are these tasty Ranch Meatballs! Easy to make and always a crowd pleaser, you can enjoy them in a variety of ways: as is, in a sandwich, with pasta and sauce, on top of salads, in soups, in a pita pocket with salad and tahini sauce…I could go on on. I like to make 2 or 3 batches of them, and freeze them so I have something quick and delicious on hand for when I need a dinner or lunch STAT. My kids love them too, which is great for the evenings where I’m serving a dinner that they don’t like, and I need a healthy alternative for them. They are super tasty and the best part is that you get 6 meatballs for just 5 Points! They key here is using extra lean ground beef – it should be 96% lean and 4% fat – so make sure that’s the one you get if you want to keep this at just 5 Weight Watchers Points. Enjoy!

I don’t know about you, but when I’ve got a busy week ahead, Weight Watchers Casserole Recipes are a lifesaver for me! It usually gets my family a good dinner, and then a day or two of lunch leftovers. One of my husband’s favorites is this Ground Beef and Noodle Casserole. It’s incredibly hearty and satisfying, is super easy to prepare, and each nicely sized serving is just 8 Points +. I really like the flavor of the ground beef in this casserole, but if you want to shave off a Point or two, you can easily use ground turkey instead. But I find that if you use ground sirloin, or extra lean ground beef (96% lean), it comes out to about the same, Points Plus wise. This is a great dinner for a cold winter’s day. Enjoy!

This incredibly satisfying and hearty Weight Watchers dinner recipe, is perfect to warm you up on a chilly fall evening. The tender and juicy ground beef is wonderfully seasoned, uniquely including a hint of cinnamon, and is served with whole wheat orzo and a delicious tomato sauce. Adding the feta crumbles on top also gives this dish a deliciously distinctive flair, adding a bit of salty savory-ness to the slightly sweet flavor of the sauce and beef.
