I don’t about you folks, but when I go to IKEA, I can’t wait to get down to their cafeteria and wrap my tastebuds around some of their famous Swedish meatballs! They are just soooooo good! Since I can’t realistically make a trip to IKEA every time I want their meatballs, I got to work making a healthier IKEA Copycat Swedish Meatballs Recipe. It’s actually a pretty easy recipe to make, and these meatballs turned out just as good, if not, BETTER than IKEA’s. Now, I just need to create a lighter version of their delicious Lingonberry sauce to go with it, and I’m set! At 9 Smart Points for 6 meatballs and sauce, this delicious dish makes a perfect Weight Watchers substitute for the original version. If you love IKEA’s Swedish Meatballs as much as I do, this copycat version is a must try!

Zucchini Lasagna – 8 Smart Points

Zucchini Lasagna

Who doesn’t love lasagna? It’s a favorite meal of mine, and one that I can easily make gluten free (just use gluten free noodles). It’s a great meal to stick in the freezer when I know I’m going to be out of town, so that my husband can just stick it in the oven after work. I thought I’d give our traditional lasagna recipe a low-carb makeover. Zucchini works so well as noodles in other traditional pasta dishes, so why not lasagna? It turns out this is delicious. I’m pretty picky about how I like my zucchini (especially cooked), but this was delicious. It was tender, but not overpowering with the rest of the delicious sauce. Give this one a try for one of your next family meals. It’ll be a definite hit!

Salisbury Steak – 6 Points +

Salisbury Steak

Sometimes it’s really nice to just pull out an old favorite. You know it’s going to be delicious every time and you know that it’s simple and everyone likes it. For my family, one of those recipes is Salisbury steak. You can use the minute steak for it, or tenderized round steak, but I usually just use hamburger. It’s easy and I’ve always got it on hand. Make up your patties and fry them in a skillet, then make up a beef gravy with onions (and mushrooms if you’re so inclined) to top the patties. Serve with a side of mashed potatoes, corn and green beans and you’ve got a simple, delicious and well-loved meal ready to go in no time.

One Pan Cheesy Chili Mac

Have I mentioned before how much I adore one pan meals? With 2 young kids, 3 cats, and a husband who acts like a teenager, they just make my life SO much easier. This One Pan Cheesy Chili Mac Recipe was a HUGE hit and I’m really excited to share it. I used extra lean ground beef in this, but you could easily substitute ground chicken or turkey if you prefer. The tender, perfectly seasoned meat is cooked in one skillet along with whole wheat macaroni noodles, and then it’s all topped with gooey, melty Mexican cheese. Try this recipe, and I’d be surprised if your family didn’t love it as much as mine.

Cranberry Meatballs – 6 Points +

Cranberry Meatballs

These meatballs are definitely a family favorite. It might seem a little strange with the combination of cranberry and sauerkraut, but trust me, it’s a perfect combination once you get it cooked together. If you don’t care for sauerkraut, you can make this with just plain cabbage instead. I like to mix turkey and ground beef so my meatballs still have enough fat to stay together but they’re a little less greasy that way. I also have made the meatballs and sauce separately. I like to bake my meatballs on a rack so they’re able to drip the fat down into the pan and don’t sit in it. I then just add the sauce and reheat the meatballs before serving. The sweet cranberries with the savory meat is a wonderful combination. I added a wild rice pilaf with vegetables and a simple tossed salad with mine. Delicious!

Ranch Meatballs Recipe

A good variation to meatloaf are these tasty Ranch Meatballs! Easy to make and always a crowd pleaser, you can enjoy them in a variety of ways: as is, in a sandwich, with pasta and sauce, on top of salads, in soups, in a pita pocket with salad and tahini sauce…I could go on on. I like to make 2 or 3 batches of them, and freeze them so I have something quick and delicious on hand for when I need a dinner or lunch STAT. My kids love them too, which is great for the evenings where I’m serving a dinner that they don’t like, and I need a healthy alternative for them. They are super tasty and the best part is that you get 6 meatballs for just 5 Points! They key here is using extra lean ground beef – it should be 96% lean and 4% fat – so make sure that’s the one you get if you want to keep this at just 5 Weight Watchers Points. Enjoy!

Ground Beef and Noodle Casserole

I don’t know about you, but when I’ve got a busy week ahead, Weight Watchers Casserole Recipes are a lifesaver for me! It usually gets my family a good dinner, and then a day or two of lunch leftovers. One of my husband’s favorites is this Ground Beef and Noodle Casserole. It’s incredibly hearty and satisfying, is super easy to prepare, and each nicely sized serving is just 8 Points +. I really like the flavor of the ground beef in this casserole, but if you want to shave off a Point or two, you can easily use ground turkey instead. But I find that if you use ground sirloin, or extra lean ground beef (96% lean), it comes out to about the same, Points Plus wise. This is a great dinner for a cold winter’s day. Enjoy!

Beef Orzo Recipe with Feta

This incredibly satisfying and hearty Weight Watchers dinner recipe, is perfect to warm you up on a chilly fall evening. The tender and juicy ground beef is wonderfully seasoned, uniquely including a hint of cinnamon, and is served with whole wheat orzo and a delicious tomato sauce. Adding the feta crumbles on top also gives this dish a deliciously distinctive flair, adding a bit of salty savory-ness to the slightly sweet flavor of the sauce and beef. Persian Beef Kebabs Recipe – 5 Points +

Persian Kebabs

With some spare extra lean ground beef on hand one day, I decided to throw together a surprisingly easy, yet delicious meal of these Persian Beef Kebabs. Whenever I make them, I typically serve them with this Persian Lentil Quinoa and my favorite Cucumber Tomato Salad. But I was feeling pretty lazy this day, so I just served them over a bed of greens with some corn on the cob. The key to these delicious, juicy kebabs, is the grated onion. It’s time consuming to manually grate them, so if you have a food processor, that would be the easiest. But the onion is grated to a watery pulp which adds tremendous flavor and moisture to the extra lean beef. They are sooooo good! And just 5 Points + for 2 kebabs. My husband drizzled some tahini sauce over his (for extra Points), which was absolutely delicious. Traditionally, the meat is threaded onto long metal skewers and cooked over a charcoal grill. But I went skewer free and just grilled them up on my indoor grill pan. These Persian Beef Kebabs are easy, delicious, and a real Weight Watchers bargain. Enjoy!

Light Beef Bolognese

This Light Beef Bolognese Recipe, is without a doubt, my absolute favorite Weight Watchers bolognese, EVER. It was inspired by the ONE and ONLY time my husband actually cooked for me…Valentine’s Day 2011. Though my man never steps for in the kitchen, the one time he did, he knocked it out of the park. And he knows that, for me, nothing says “I love you” like a big bowl of thick, meaty, decadent bolognese. He spent days researching bolognese recipes online, and he ended up creating the most delicious one I’ve ever had. So of course, I worked hard to duplicate that amazing flavor in a lower fat, Weight Watchers version. And my success was tremendous! My healthier bolognese is absolutely incredible….and it has become a regular in our dinner rotations. At 8 Points + per serving, you’ll get an amazing bolognese that tastes so good, you’ll never know you are eating healthier. This is a MUST MAKE.

Asian Meatballs

Happy Memorial Day, everyone! If you are like me, and feeling too lazy to bust out the grill today, then you’ve come to the right blog post. Today, I’m sharing a new and delicious low calorie meatball recipe that requires no grill. Meatballs are a pretty popular dish around here. The kids love them, the husband loves them and they are pretty easy to make. They also freeze well and make for great leftovers or packed lunches. So because I make meatballs a lot, I’m always looking for new ways to make them, and trying to incorporate unique and delicious flavors, while still keeping them low in Points Plus for me. After my Mexican Meatballs were a huge hit, I decided to explore with some Asian flavors and created these tasty and slightly tangy Asian inspired meatballs. They were SO good!! And it’s really such an easy Weight Watchers meatball recipe that takes very little prep work and cook time, so you can get them on the table quickly. You can serve them as an appetizer with toothpicks, or over rice or noodles as a main dish. But at just 4 Points + for 6 meatballs, these Asian Meatballs are an excellent Weight Watchers Recipe to try!

Ground Beef and Cheddar Casserole

When you want something beefy and cheesy, look no further than this Ground Beef and Cheddar Casserole Recipe. It is excellent. And 7 Points + per serving is quite a bargain for what you get. I also feel like this casserole is really filling and satisfying…probably because it addresses all of the things I crave most: meat, carbs and cheese. This is a really easy Weight Watchers Casserole that you can put together quickly for a weeknight dinner and the family will love it. The bell peppers and zucchini give it a nice flavor and bulk it up some too. It’s also a sneaky way to get those veggies in for the kids! When I was making this, I felt like Honey Boo Boo’s mom making one of her “multi-meals”….but it really is an all in one dish! Carbs? Check. Protein? Check. Dairy? Check. Vegetables? Check. See? It is a multi-meal! Everything you need in one fantastic casserole. Enjoy!
