Caesar Salad

Good, low fat Cesar Salad Recipes have always been a hit with weight watchers, but up until I tried this version, I never really found a creamy and delicious Caesar salad recipe that was truly tasty and yet, still low in Weight Watchers Points. Made with a traditional homemade Caesar salad dressing recipe that got a skinny makeover, this tasty salad definitely makes the cut! Still full of all the flavor and creamy goodness you want whenever you eat a Caesar salad dressing made from scratch, yet with just a 3 Points for 2 cups! Not bad at all, folks. So do yourself a favor and skip the crappy low fat Caesar dressings you see in bottles at the grocery store, and make your own, healthier version!

Low Calorie Caesar Salad Recipe

– 1 head romaine lettuce, chopped
– 1 cup fat-free packaged croutons
– 2 Tbsp grated Parmesan cheese, fresh
– 3 large garlic cloves, finely minced
– 2 tbsp fat free plain Greek Yogurt
– 1/4 cup fat free chicken or vegetable broth
– 3 tsp olive oil
– 1 tbsp fresh lemon juice
– 1/8 oz raw anchovies, paste
– 1 tsp Worcestershire sauce
– ½ tsp Kosher salt
– 1/8 tsp black pepper, freshly ground

In a large salad bowl, whisk the Parmesan cheese, garlic, broth, oil, lemon juice, yogurt, anchovy paste, Worcestershire sauce, and pepper until combined well. Let stand 5-10 minutes. Then, add the lettuce to the bowl; toss to coat evenly. Sprinkle with the croutons.
