When I saw this recipe, I just had to try it. Life in the Midwest includes a lot of potatoes, and right now the green beans are fresh from the garden. It’s a perfect time to try this salad, and this salad is wonderful. The tart vinegar combined with the potatoes and green beans is perfect. The potatoes and green beans are tender, but still crisp enough to provide some texture. This salad is sure to be a hit at your next family dinner, barbecue or potluck.

Green Bean & Potato Salad

A vibrant, fresh and delicious salad that’s a perfect addition to your next meal.


  • 2 lbs red potatoes, cubed
  • 1 lb fresh green beans, trimmed and halved
  • 1 small red onion, halved and thinly sliced
  • 1/4 cup fresh mint, chopped (optional)
  • Dressing
  • 1/2 cup canola oil
  • 1/4 cup white vinegar
  • 2 Tbsp lemon juice
  • 1 tsp sugar
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1/4 tsp pepper


  1. In a large pot, bring the potatoes to a boil.
  2. Reduce heat and cook for 10 – 15 minutes.
  3. Add the green beans for the last 4 minutes of cooking.
  4. Drain the potatoes and green beans and place in a large bowl.
  5. Add the onion and mint (if using).
  6. In a small jar or bowl, mix together the dressing ingredients.
  7. Pour the dressing over the salad and toss to coat.
  8. Serve immediately.
